Instructions

1: Add 1/2 cup boiling water to 1 teaspoon saffron, cover and set aside to infuse.

2: Mix together 3 cups cream, 1 cup milk, 1 tablespoon rosewater and 200g of sugar, whisk until sugar has dissolved into the cream. Allow saffron water to cool completely before adding it into the cream.

3: Pour the mixture into the ice cream maker and churn for 15 minutes.

4: Add 1/2 cup chopped unsalted pistachios and churn for a further 5 minutes.

5: Pour the ice cream into a container and freeze overnight.
