Warm and gooey Malva pudding drenched in brown sugar sauce, a delightful treat from South Africa. This recipe combines the light texture of the pudding with a rich sauce, making it a go-to dessert for many.
Add the sugar, eggs, apricot jam and whisk together for 2 minutes until well combined.
Add the flour, baking soda and whisk until just combined, add the butter, milk and apple cider vinegar. This will give it the airy texture.
Whisk for a minute and pour into 8 small ramekins. Bake at 140C for 20 minutes.
Make the sauce by melting all the ingredients together and set aside to cool.
When the puddings have finished baking pour the sauce and allow to absorb for several hours or overnight.
Serve with cream or ice cream or both! Enjoy!
