This energy-efficient air fryer recipe features a glazed, mouthwatering chicken that's salty, zingy and dripping in its own juices. Perfect for Christmas lunch, it's simple, quick, and ready in no time.
Add olive oil, lemon juice, pepper, salt, oregano and honey together in a bowl.
With a paper towel, pat the chicken skin to remove any excess moisture, sprinkle some sea salt and pour over the glaze. Rub it through the cracks on the chicken to ensure it’s evenly spread.
Place the chicken along with any chopped root vegetables of your choice directly into an air fryer with a rack to capture all the chicken juice.
Turn the air fryer on at 175C and cook for 15 minutes until the skin turns dark brown.
Lower the heat to 150C and cook for another 40 minutes.
Turn the chicken around, increase the heat to 175C again, and cook for another 10 minutes to ensure a crisp skin all around the chicken.
 Serve and enjoy!
