A salty sweet delicious rocky road filled with crunchy peanut butter and topped with pistachios. It's a quick treat perfect for the Christmas season, combining chocolate, cranberries, coconut, and marshmallows.
1: Melt the chocolate in the microwave, 30 seconds at a time and keep stirring in between.
2: Add the peanut butter, cranberries, pistachios, coconut, and marshmallows (sliced in half) and mix well.
3: Place half of the mixture in a tray and add 5-6 tablespoons of peanut butter on top. Pour the rest of the rocky road mixture on top and sprinkle the filling mixture to decorate.
4: Refrigerate for 30 minutes or until hard to touch. Cut and enjoy!
