Making your own rough puff pastry is worth it for its flaky texture and rich taste, especially with quality grass-fed butter. This fool-proof 6-ingredient recipe guarantees golden flaky pastry at home.
Chop the chilled butter into small cubes.
Mix the flour and salt together in a bowl and add the butter. Press down with your fingers to flatten the butter.
Add the water, vinegar, and sugar. Mix well with your fingers. You still want big chunks of butter and some chunks of flour.
Bring it together into a rectangle with your hands on a bench and freeze for 30 minutes.
On a floured bench, roll the pastry dough into a rectangle. Take the edge of the pastry and roll into a tight log. Turn the log and roll it again into a rectangle and again into a log. Place in the freezer for 30 minutes and repeat this process 3 times on a floured bench.
Roll it into a thin, large rectangle and cut 5-6 round discs. Place them into a baking tray and place a smaller ramekin inside with rice or baking beads.
Bake at 200C for 10 minutes, reduce the heat to 170C for 30-40 minutes until pastry is completely cooked.
Once cooled, remove the ramekins and fill them with anything you like! Enjoy!
