A no-bake strawberries and cream cake made by stacking crepes, vanilla cream, fresh strawberries, and strawberry jam. Even though it looks fancy, it's simple to make with some patience in perfecting the crepes.
Whisk together the eggs and sugar until well-combined.
Add the flour and whisk until combined.
Add the melted butter, milk, and vanilla extract. Whisk and pour the batter through a fine mesh sieve to get rid of any clumps.
Cover and chill the batter in the fridge for 1 hour.
Heat a 20cm frying pan on low heat and pour the crepe batter into the middle.
Cook each crepe for about 2-2.5 minutes, then transfer to cool.
Repeat until you have about 18 crepes, divided into three equal piles.
In a bowl, add whipping cream, powdered sugar, and vanilla; whisk to soft peaks.
Lay down a crepe, top with whipped cream, and repeat for 6 layers. Add cream and chopped strawberries, then layer another 6 crepes with cream and strawberries. Add a final layer of 6 crepes and cream.
Spoon on remaining cream, add jam and more strawberries.
